Carina's Bakery combines the unique recipes of my Swedish heritage that I learned from baking with my mom and helping my grandparents as a child- as well as my own creative inspirations. Everything is vegan, so as not to add to the troubles and abuse… Carina's Bakery combines the unique recipes of my Swedish heritage that I learned from baking with my mom and helping my grandparents as a child- as well as my own creative inspirations. Everything is vegan, so as not to add to the troubles and abuse that humans cause. Most importantly, our products are made and sold by employees with disABILITIES whose skills and grit we find and highlight- adding extra soul and charm to our products and our space. The business was first founded as a self-run product in 2015 called Flourish Baking, but its true beginnings were when I opened my first storefront in Beaverton, Oregon in that fall of 2017.

Our Story
As a three time brain tumor survivor and legally blind 25 year old at our grand opening, many people thought I was a bit crazy to want to open a bakery. But I come from a line of pioneering, entrepreneurial and determined emigrants from Sweden and… As a three time brain tumor survivor and legally blind 25 year old at our grand opening, many people thought I was a bit crazy to want to open a bakery. But I come from a line of pioneering, entrepreneurial and determined emigrants from Sweden and Ireland who have taught me to persevere, work hard, and make my dreams come true. So it should have come as no surprise to my family (who heard me boast that I would open a bakery since I was five and making Toll House cookies with Mom). I learned the hard way how difficult it is to start a business (peddling baked goods from a tricycle as a teenager), go through pastry school and try to find a job in an industry where speed is king and blindness isn't trusted. And I still came out with my passion and hunger intact.
